Baby Back Ribs

Baby Back Ribs are cut from where the rib meets the spine after the loin is removed. The upper ribs are called baby back ribs, but not because they come from a baby pig! They’re only called baby because they are shorter in relation to the bigger St Louis cut. Baby back ribs are very tender and lean but are in higher demand than St. Louis-style spareribs, so they have a higher price tag.


St. Louis Ribs

St. Louis Ribs are the meaty ribs cut from the belly of the animal after the belly is removed. The ribs are then trimmed down from Spare Ribs into the popular St. Louis-style spareribs by cutting away the hard breastbone and chewy cartilage, so the slab is more rectangular in shape. There is a lot of bone but also a higher amount of fat, making them very flavorful if cooked properly. Our ribs are marinated with Stew’s Super Natural Dry Rub and then Slow Smoked to Perfection for 6 hours to Create the Most Tender Moist Taste that your Palate Deserves (Try Our Scotch, Apple Butter Chipotle or Kansas City Style BBQ Sauce)

Can You Substitute One Type of Rib for the Other?

Baby back ribs can be substituted for St. Louis-style spareribs, but since they are smaller, you will need about 1 1/2 times the amount of baby backs as St. Louis-style ribs.

Huli Huli Chicken

Huli Huli means Turn Turn.  This will “Turn” your party into a success.  A beloved Chicken dish throughout Hawaii, served mostly by shade tree cooks from roadside stands, parking lots, and parks at fundraisers. Drive around Oahu and if you see smoke rising and smell something sweet, it is likely Huli-Huli chicken. The locals keep napkins in their glove compartment just in case.
